Steps

  1. 01

Preheat the oven to 220°C (425°F). Cut the cauliflower into evenly sized florets — about 4 to 5 cm — so they roast at the same rate.

  2. 02

In a large bowl, toss the florets with olive oil, garlic powder, salt, and pepper until well coated. Spread in a single layer on a large baking sheet with space between pieces — crowding causes steaming instead of caramelizing.

  3. 03

Roast for 25 to 30 minutes, tossing once halfway through, until the edges are deep golden and crispy. Serve immediately.

Why it works

What is caramelization?

Caramelization is the browning of sugars when exposed to high heat (above 160°C). As sugars break down, they form hundreds of new flavor compounds — nutty, sweet, slightly bitter, complex. It's why a roasted Brussels sprout tastes nothing like a boiled one, even though it's the same vegetable.

Should you cover the pan when roasting?

For large cuts, use both methods in sequence. Covered roasting traps steam and delivers fast, moist heat that tenderises the meat without browning. Uncovered roasting is dry heat that lets moisture escape from the surface, which is the necessary condition for browning. Cover for the first two-thirds of cooking, then uncover for the final third to build the crust.

Why it works

Why does crowding food in an air fryer make it soggy instead of crispy?

Crowding an air fryer traps the steam released by food, turning the basket into a humid environment instead of the dry, fast-moving air that crisps surfaces. When moisture can't escape, food steams rather than dehydrates — and steamed surfaces stay soft. Cook in a single layer with space between pieces so hot air can circulate and pull moisture away.
