Steps

    Rinse the black beans under cold water and drain.

    Add the beans, water, crushed garlic, cumin, bay leaves, and salt to the pot.

    Seal the lid and cook on high pressure for 25 minutes.

    Let the pressure release naturally for 15 minutes, then manually release the remaining pressure.

    Remove bay leaves. Serve with the cooking liquid or drain depending on use.

Why it works

Why do dried beans cook so much faster in a pressure cooker?

At 120°C, a pressure cooker breaks down the pectin and hemicellulose in bean cell walls much faster than boiling at 100°C — and the pressurized environment forces water into the beans simultaneously. Chickpeas that take 90 minutes on the stovetop cook in 35 minutes unsoaked, or 12 minutes soaked.
